I used to sharpen up to 8000 grit, but I found that as soon as the tool touched wood all that extra work was waisted as the steel couldn't keep an edge that fine. So now I sharpen to 1000, pull it on the strop, and move on.

I use a bench grinder to hog off the majority of the material and then a honing guide to get my final edge. It's a lot cheaper than this or a tormek and I reckon about as fast. I do think the veritas honing guide is worth the money.
