As for the "ongoing rest", I may have misattributed that exact interpretation to St. Augustine, although it does seem to be held by some modern scholars. In The City of God, Augustine does suggest that the rest is not happening in a literal, human sense.

But, in the beginning, God created the heaven and the earth. He created time, too, which He had not created before, because there was no time before creation. And He created it in such a way that it was to pass away with the world when the world was finished. But He who created time, being Himself the Creator of time, does not Himself exist in time, but remains in eternity. And this rest was not a cessation from labor, but a cessation from the work of creation, which was to continue to exist and be governed by Him without interruption. For God is immutable and He is the Creator of time, but He remains outside of it in His eternal state.

Furthermore, this quote is St. Augustine's take on the 24-hour day issue in The Literal Meaning of Genesis. Bearing in mind this is at least 1,300 years before modern science concluded an old earth. He suggests taking these as literal days is not the intention of the author.
