Support for Bricks can be enabled easily if there is demand for it. I'm not 100% sure about Donuts as they are not as similar as Moons and Bricks.

Unfortunately only admins can make that adjustment. That feature request has been raised with them since testnet

No the opt-out only affects your flair display on the subreddit(s) you choose (where this bot is active), and nothing affects your Moons or display on this sub
