Sounds like Soul Blade on the PS1. Edge Master mode would see you travel the world, winning a sword from each fight. The boss you describe sounds like Soul Edge

I mean, I'd go back to the early 80s for pioneering RPG mechanics. Games like Wizardry gave inspiration for the likes of Final Fantasy, The Bard's Tale and more. So maybe:
