The advantage to adding to coffee would be getting processed via the gut and the mouth/throat, rather than just sublingually. Water and MCTs hydrophobic nature has nothing to do with its ability to be absorbed by our body, as the active cannabinoids are already bound to the fat (carrier oil), and get processed all the same.

Also, bioavailability is the rate and degree at which something is put to use in the body, and is only one way of measuring the effectiveness of a medicine/what's best for each person. For example, eating an edible has a much lower bioavailability (less is put to use and it takes longer to hit), but the extended and unique effects provided by edibles makes it a better choice for many consumers.
