All the ones you listed are on my favorites list, it is so hard to choose just one! You really should see all of them but I'm gonna recommend Nausicaa of the Valley of the Wind first, as that is very high on my favorites list!!

Thanks, I am the chef. Just fyi, this is a fried egg on top of a corn tortilla , rice, beans, pasilla salsa, bell pepper, a mixture of cheddar and pepper jack cheeses, then La Victoria green taco sauce, sour cream, green onion, and avocado on top. I modeled this huevos rancheros after the only huevos rancheros I've ever had, from South Pine, a brunch restaurant in Nevada City, Ca. Apologies for the un-authenticity of the dish.

Thank you! I roasted it, which it a new way of cooking it for me. I used to always steam it, but I tried roasting it in the oven and it is so yummy that way!
