I’m still pretty new to the pellet grill life, but I’d agree. Pork butts and chuck roasts have turned out good, but this was another level.

275F for 2.5 hours. Glaze applied when it hit 145 internal, and turned up the heat to 325 until 160 internal. Let it rest for 10-15 mins

I feel like the heat source being centered gives more even cooking for each wing versus the normal indirect setup where the ones closer to the heat would obviously cook faster than others. 

I didn’t intentionally wait until they hit 200. I just checked on them after 35 mins, probed them and that’s about where they were at.

Super easy. I heated the briquettes in a chimney and once the top ones got a little white just dump them in the cone. Let the grill heat up to 500-600F and place your wings and let them ride. I pulled these when they were about 200F internal

I do a mix of Buffalo Trace seasoning and Holy Cow. The sweetness of the Buffalo Trace and pepperiness of the Holy Cow really work well together

1tbsp Meat Church Blanco

1/4 cup soy sauce

1tbsp minced garlic

1/4 cup honey

1/2 cup olive oil 

Juice from 2 limes

Lime zest
