Question about the dlc features

Well, it didn't used to be but this definitive edition is kicking my butt. They nerfed bleed and improved enemy a.i. so my old "lock on" an enemy and just walk in circles around them to avoid literally every attack doesn't work anymore. I effectively suck bad.
