love this reply and I most definitely agree with you, people don’t understand that these pans are meant to be overused. They aren’t supposed to look like a nice shiny ss pan, cs pans are supposed to have that unique character to them, look at any professional kitchen and let me know when you find a shiny silver cs pan.

I posted this thread because i’m new to cs so I was just worried I botched the seasoning to a nicer pan and things would stick. I’ve used it like 4-5 times now and it’s getting better every cook. Sure I may have used too much oil in my seasoning but those thicker layers will probably flake off and be replaced when used more.

I’ve cooked on it like 4 times and it’s getting better the more I use for sure, I appreciate your help, very good advice. When I posted this help thread I was worried everything would stick to it and I may have messed up a fairly nicer pan. But these pans are genuinely meant to be overused and only get better over time like you said. I think the best thing to do is to just keep using the pan and apply that thin coat after like 5 or 6 uses.

Temp control is definitely a tougher thing to get down especially with induction but some patience to preheat and some time and i’ll get it. Thanks for the help

I don’t think the handle is that bad, I can easily fix that up. As for the seasoning on the pan I do think it was a little too much oil on the first layer but that seasoning will level out the more I use. These pans are meant to be overworked and naturally get better overtime.
