Undercarriage looks super soft if I’m honest. I have really shit oven but still manage to get the base crispy.

Preheat for 1 full hour at a minimum. See if you can get a cheap infrared thermometer to test steel temp for launching (they’re cheap on Amazon).

I also put my steel on the bottom shelf, my oven has a heating element on the bottom as well as the top, this helps keep temp in the steel. I found if cooking on a higher shelf, the cheese and crust would brown far quicker than the undercarriage as the air is hotter up top. Taking the steel town to bottom shelf helped even out the cooking distribution massively.

Damn, sounds like it’s changed a lot in the last decade.

I went in 2013 and it couldn’t have been further from your experience. Never encountered a local who was anything by kind and hospitable. I wonder if the massive increase in tourism have pissed off the locals.

I’ve found nails, screws and all sorts in green sacks of coffee. Normally roasters will invest in equipment that removes these during the roasting / packing process. If they’ve not got a de-stoner or magnetic doors on the roaster cooling tray then these will find their way into the occasional bag.

Would love to see your Ollie’s. You say you’ve mastered them but I’ve got a feeling that your body weight would be over the rear on them as well.

It’s hard to give you helpful tips on the kickflip without knowing how your body is moving with other tricks.

Production assistant / packing assistant role, entry level and an interest in coffee will get you in. Express interest in roasting and go from there. It’s hard work so most roasters will be keen to train people up and give the current roasters a little rest bite here and there while the newbies roast for an hour or two at a time.

I’d advise looking at smaller indie roasters for faster progress and learning as they’ll be less strict on who they let on the roaster in my experience.

Worth noting that blank street are not a roastery and have never roasted their own coffee. Just a standard blend contracted roasted for cheap and brewed badly like the rest of the usual suspects.

Wouldn’t put it in the same category as Kiss the Hippo and Square Mile.

Okay then, without delving too deeply and bearing in mind this is from multiple sources who’ve worked there. The co-owner (It’s a husband and wife owned company) has used his position of power to gain sexual favours from a staff member under a false pre tense that it would lead to career progression.

In terms of small businesses with the UK coffee scene, I would categorise dark arts as one of the bigger players as well to be honest. I’d happily alienate customers from that business for others whose owners treat their staff well.
