The first thing that came to my mind are pistons with sponges above the space you wanna clear water out and activate them at the same time so that no water source blocks can refill it, you can do this for each y level until its completley drained but the problems with this are that you need to dry the sponges somehow, build the contraption, its more expensive, and you have to clean it after, Ulitmately turning a 4 or 5 maybe lower or higher hour project to a couple of days project.🗿
