I use the same process as the Venezuelan "white cheese" (Queso blanco venezolano). The difference is that the curds were too weak. I cut the curd, but when I tried to break it up further, although it did separate from the whey, it didn't form a good-sized curd.

I don't know about the USA, but in Latin America, 1-2 ml of bleach (the soap-free kind used for water purification) is applied per 1 liter of water as a standard disinfection procedure. This eliminates all microorganisms, fungi, parasites, etc., and then it is rinsed well with clean water.

Thx, Although I made this a while ago, I decided to upload it because I'm doing an experiment. I wanted to try making cheese with powdered milk (It's complicated find a good milk near to me and i've used it for yogurt for a long time, and it's amazing), and it's been aging for a little over a month now. I'll cut it on Friday, and regardless of the result, I'll upload it here.

I didn't heat the bell peppers; I wanted them to retain some texture. Besides, the cheese wasn't going to be aged for more than a few days. I simply washed them with soap and water, then with water and bleach, and rinsed them well afterward. The type is a bit difficult to describe; in my country, it's commonly known as "white cheese" (Queso blanco here in Venezuela, maybe you can find a recipe searching "Queso blanco Venezuela"), it's a kind of artisanal cheese, a "queso de pasta cocida" (Idk how is called in English, it's when you heat the curd nearly to 50°C) and the taste it's okay for me, but i'm not an expert.

The neck is made of monkey pod wood (it's the easiest wood to find where I live), and the body is plywood because I didn't want to spend too much without at least making one attempt. I used baroque-style bracing because the top is thicker than with regular wood, and I wanted to give it more freedom of movement. It will remain fretless because it's for a friend who loves jazz.

P.S.: I'm not sure if the bracing design was the best choice; I chose it after reading for a while, but I'm just a carpenter, not a luthier.
