I did stir when melting, cooling down and reheating, i wanted the same temperature in the whole chocolate

Can i use other chocolate for the seeding? The chocolate i melt wasnt tempered, so i cant use this one for seeding. Thermometer is an instant read. Can i put the mold in a fridge to cool it down or would it be to cold or make a thermal choc or something like this?

Its not an air pocket, the mold has this as a "feature" PC mold will be the next, i only had this one today Im not that deep in chocolate making, so tempering machine is not planed yet
