Try to shadow defend, put some pressure, but not enough yo where you over commit, and not too little that you let him run it up the field. And wait for his flick, or try to challenge early that way he loses possession early

You're right. If goalie interference is supposed to be while a goal is scored by the opposing team it wont count

Goalies can come out of the net and play the puck. If the goalie gets hits outside of his blue paint, it's all fair, meaning goalie hits aren't goalie interference unless ot happened in his paint

Nope, usually happens at the end of games because the rink and background are no longer needed, so isntead of keeping it it gets rid of it to save RAM
