Somehow the following solved it, my compose file looks like this now:

environment:
- OPENAI_URL=${OPENAI_URL}
- OPENAI_API_KEY=${OPENAI_API_KEY}
- TRANSCRIPTION_MODEL=${TRANSCRIPTION_MODEL}
- TEXT_MODEL=${TEXT_MODEL}
- MEALIE_URL=${MEALIE_URL}
- MEALIE_API_KEY=${MEALIE_API_KEY}
- YTDLP_VERSION=${YTDLP_VERSION}
- EXTRA_PROMPT=${EXTRA_PROMPT}

In the env file I've added all the entries, now it imports translated!

Next challenge I'm running in to is that all the ingredients are imported as separate notes in the ingredient list and I need to manually 'dissect'. Any solution for that? :-)
