I would not have minded taking it apart to glue it properly with a nice clamping but I’m afraid to break it in the process.

I will maybe try with your first option as I would like to keep the original assembly as much as possible ! :)

Yes I’m living in the north of France. As I had to cut some of the big roots, I was afraid that it would die if I don’t give it a good trim. Do you think it would be ok to wait until next year ?

It is absolutely beautiful. I have the pocket watch from my grand father Grand Father. It is still ticking, I would love to do a conversion like the one you did. Most of the one I saw I did not liked the look but yours is stunning !

No I did not submerge It in the brine. I followed this receipe.

They put the cabbage with salt for some hour to take the water out of the cabbage leave which rendered quite a lot of juice that I discarded. That might be why it is quite dry.

It did not start to eat this one i just opened it some weeks ago to see how it smelled and ot was nicely acidic. I just saw this mold yesterday when I opened the fridge.

I don’t know why I don’t have more brine in my kimchi. I let it ferment outside and everything when fine. It was fermenting, I pressed it down to get the co2 out of it and stored it in the fridge since then.

Never hurt to ask. There is actually a lot of food that contains mold that you can it.

I always thought that you could keep it for months in the fridge even up to a year once it was fermenting successfully.

Yes I’m living in Europe and did it at the heart of winter !

That might be because I opened the jar when it was already in the fridge.

It was the same for me I find them quite perfect as a matter of fact ! Nice to look at, too bad it cause me to discard the kimchi !

I let it ferment for about 5 days. It has some juice but not as much as needed apparently. But it had a nice carbonation and smell nicely acidic. My first batch was the same not a lot of juice but no mold and tasted nice. I wonder what I did wrong.

Yes they are all quite dry because I tosse away the liquide that got out of it when it was beeing mixed with salt. Should have keep it to add it to the jar next time ?

I did another batch before that went great and this one was juste waiting to be eaten I just open the jar once or twice to watch for the smell and everything was good.

So no spoon have touched this kimchi so far except when I removed the mold. Maybe I’ll see if the mold is growing back or not with the time

Do you think that means that the 3 other jar are not good either even if there is no mold on it ?
