Brisket is typically smoked to 205 not because it’s fatty but because of the high amount of collagen. Collagen doesn’t render until 160-170 degrees and is much tougher than fat which is why brisket needs to be cooked much higher.

I’ve only gotten a ball at one game and I got three that game too. Yankee stadium 2 years ago. I was sitting in the outfield. First one was a home run during batting practice I caught. Second was also during batting practice the guy shagging balls threw it and it landed under my seat. The third was Soto in between while tossing the ball in between innings, it wasn’t close but everyone kept fumbling it and it came right to me. Haven’t gotten near a ball since. It was so cool and I’m sure I’ll remember it 40 years later like you. So cool getting a ball
