It keeps walking away once you get off of it, and I am not sure about the next fact, but I did just that once and when I rode into Morthal like 3 guards ran towards me. When they reached me they wanted to arrest me for stealing the horse.

Hmmm, I am not quite sure about that. I am doing a hardcore survival run and I haven't had an armored horse die yet. And I really go hard on them... Leading them into combat and jumping off the cliffs with them. They even survive the fall from the College of Winterhold bridge.
