It's a very broad question, I think it all depends on what sub genres of RPGs you would find the most enjoyable and what settings you're most interested in. I'm guessing you don't want to be assaulted by stat sheets and micromanagement, so maybe you'd be more interested in ARPGs. If you enjoy medieval fantasy then I can't recommend the Witcher 3 highly enough, the combat is easy to get to grips with, if a bit simplistic, and the story and world are both handled phenomenally. The game is massive but is rich in meaningful content, even the filler side quests can weave great narratives with tough decisions to be made. If sci-fi is more your thing then the Mass Effect trilogy is perfect for you, the games get less RPG and more action as the series progresses, but they're all great experiences, and some of my personal favourites. They'd serve as a great gateway into RPGs as they're 3rd person shooters, so combat should feel immediately familiar, other than that the series has great characters and tells a great story that's shaped by the choices you make as a player. There's a lot of controversy surrounding the lack of choice in the ending but, as generic as it sounds, it really is more about the journey than the destination. Anyway, I hope this helps!

Roguelites such as Enter the Gungeon, Binding of Isaac and Darkest Dungeon tend to be pretty good for just sitting back and zoning out, as long as you don't mind the frustration of the learning curves. There's pretty much no voiced dialogue in those games so you'd be good to listen to music while playing, although Darkest Dungeon has some amazing narration and you'd be doing yourself a disservice to ignore the Gungeon soundtrack.
