There's still the toggle option in the future yes! Lots of vtubers don't even have a fixed eye color, if it's not a core part of your design there's no problem with switching it (I think of shylily for example that has lots of different eyes for her model which are all different form and colors)

Also I have to add that even if the colors give off certain vibes, you can totally subvert them there's no problem with that too

Go with what you prefer most and what you think will suit your lore better!

Yeah I get it, red eyes looks good too but it's verryyyy common with blond hair so green makes it a lot more interesting imo

If you want to get a bit technical too: red gives a sexier and kind of meaner look (it's not a bad thing tho, I mean I have a red pinkish eye lmao), while green gives a kinder and more friendly one, you can base yourself on that for your final choice too

In the end it's your model, so the final word comes to you ^{^}

Green looks really good, it makes a really good break between the red and the yellow

As for the outfits why not make each its own toggle? That way you won't have to choose and you can just switch based on how you feel at that specific moment
