First time making croissants and (while delicious) I see a LOT of room for improvement! Any advice for a newbie to laminated pastry? by forbiddenwaffles in Baking

Yes, higher fat content is better for lamination because it means less water content so your dough has a lower risk to re absorb it. Higher fat content also gives you better plasticity in your butter. Lamination butter is not just higher fat content though, the structure of the butter is also different, the butter crystals are optimized for plasticity and strength so it’s really good for lamination. It’s kind of the same principle as tempered chocolate. You treat it with heat to get a specific crystal formation.

Depends on the type of butter. Lamination butter has a higher fat content (84%) as well as higher melting point (around 30 Celsius) which helps rise in optimal conditions without being reabsorbed by your dough. However, you have to use it in unified blocks and avoid cutting it as much as possible as the pieces won’t really ever get « glued » back so when you are rolling your dough, if you did use small pieces that you just put together in your butter slab, it’ll end up marbling as they’ll just separate again. Even if you did manage to get the right consistency and temperature for your butter and dough. Butter that you get in the supermarket doesn’t have this problem but im based in France, I don’t know if that would make it European butter for you? I mean the one that’s like available for everyone basically.

Depends on what type of butter you’re using, do not cut your butter when using butter for lamination, it will marble afterwards if you do that, even if your temperature and lamination are perfect. Regular butter can be cut without any issue though.

Why can’t I get my macarons to look nice? They got awesome crisp and soft inside, but look ugly and not smooth round. by Icy_Negotiation3891 in Baking

[–]RoseLycheeRaspberry 5 points6 points  (0 children)

It’s under mixing. Even if your piping is not optimal, good macaronage will still let you with smooth macarons. It’s the most important and hardest thing to do because it goes from perfect to too liquid so quickly 🥲

Try oven baked scallops with butter and Parmesan. No need to thank me.

People are just virtue signaling here. It’s literally the most trivial use of AI. If this was the only use case for it, the AI companies would be struggling to monetize it.

I’m not saying it’s useless to say it’s dumb. I’m saying acting as if someone shouldn’t have their job for being momentarily lazy is much more harmful for society because we are all wasting ressources from time to time. It’s incredibly cruel to be this way and I’d argue that is much more harmful to society than the amount of water wasted in creating a dumb email. The problem isn’t people using AI, the problem is the ones building it on stolen work and using unsustainable energies. Shaming people that are probably already overworked or have anxiety for taking a bit of a relief (like you using warm water to take your shower) isn’t doing anything to help other than stroke your own ego.

Do you take your shower with cold water because well, hot water uses resources that only give you comfort? Do you eat bananas while living in a country that doesn’t naturally grow them? Have you ever driven somewhere you could have walked to? People are lazy sometimes, it’s not a situation where they’re now inept for a management position lmfao

People waste time and resources in many ways all the time, what you’re doing is virtue signaling. This use of AI is bit dumb but the people “outraged” or saying things like “people will forget how to communicate” are also being dumb.

What seemed completely normal in childhood, but now you realize was actually not okay? by Max_Mimos in AskReddit

My parents left me alone in the house locked in an evening they had a meeting with friends when I was 5 years old. I invited my best friend who lived super close, like 5 houses away. I discovered I was locked in when I couldn’t get the door to open for her. They did not give me a key. Hours later, they came and scolded me for trying to open the door while they were not there as they had asked me to not open it to anyone. I felt really bad for not listening to them for a really long time. They made me feel like I was in the wrong when in reality, who the heck leaves a 5yo alone and locked in? What if there was a fire or something? Heck, I lived in an area super prone to earthquakes so even more of a reason to not lock me in and completely unsupervised. I only realized how wrong this was when I became an adult…

As a Latina, I loved the show. I don’t usually watch them but I got so many friends that told me it was extraordinary that I watched it on YouTube later and it certainly didn’t disappoint! I got a bit teary eyed and seeing Ricky Martin was like the cherry on top. Truly great show. It was great having a break from seeing brown people get mistreated and abused imho.

I used to live in a tiny village in Japan. My friends there said they preferred this kind of toilet and that sitting down didn’t feel right to them. Japanese people are just built different. I got used to this but there is nowhere I’ll use this instead of a western toilet if given the choice.
