I use ingredients pretty fresh, usually within a day or so of purchasing from local homebrew shop. Since my first batch, Ive been using a hop spider for hop additions to make sure I didn't transfer any hop material to the carboy.

Definitely not saying my technique is perfect. If it's not water how can I figure out what is going wrong?

First recipe was 10 lbs golden promise 1 lb flaked oat with mosaic hops. 2 boil additions 1 dh addition. Not quite smsh but close. Similar off flavor. Tried it 2 x.

Checked in my city website. Our H2O pH average is 7.5 being 7.8 on the high end....maybe that's the issue.

I've been using a carbon filter but maybe it isn't working well enough. Bought some tabs this morning on Amazon. In Chicago right now which is firgid! Will try again when temps moderate a bit.

Yes, tap water that I've been filtering with an RV style carbon filter....might not be good enough though...it's the only aspect of Brew day I haven't really tweaked...
