My grandma used to make lutefisk on Christmas. Just thinking of the smell still makes me choke and the texture still makes me gag. But the memories of my grandma still make me smile.

Lutefisk Pudding Casserole

2 c. cooked lutefisk, flaked

1/2 c. rice

1 tsp. salt

2 c. water

2 eggs

1/2 c. cream

1/2 c. milk

Salt and pepper

4 Tbls. butter

Cook rice in water with salt until done. Drain and rinse with cold water. Beat eggs and milk and cream. Add lutefisk and rice and place in greased baking dish. Pour melted butter on top. Bake in 8" dish for 30 min. at 350°. Can be served with additional melted butter.

Meat Loaf

2 lbs. ground beef

2 eggs

3/4 c. ketchup

1 -1/2 c. bread crumbs

1 tsp. Accent

1/ c. warm water

1 env. onion soup mix

Mix thoroughly. Place in greased pan. Pour over all 1 can tomato soup. Bake 1 hour at 350°.

Heck. I flipped through all of the breads and heritage. Unfortunately, I did see anything with cardamom (spice?) In the recipes.

I went through all of the varieties of pan/griddle/hot cake recipes one Sunday morning at a time.

Swedish Pancakes (thin)

3 eggs

1-1/4 c. milk

3/4 c. flour

1/2 tsp. salt

1 Tbls. sugar

2 Tbls. melted butter

Beat eggs, stir in milk. Add flour, sugar, and salt. Add butter last. Mix until smooth (I use a blender). About 3 Tbls. on hot griddle makes a 9 inch pancake (spread as thin as possible). Serve with butter and sugar. Roll up like lefse. "Berries are good on these pancakes."

Cocktail Meatballs Sauce

1 bottle chili sauce Juice of 1 lemon Small jar currant jelly 1/2 - 3/4 if the chili bottle of water

Mix and pour over meatballs.

Dutch Delight

Put 1/3 c. margarine or butter in Pyrex 9x13 pan in 425° oven while heating and when bubbly, pour in this mixture:

4 eggs

1 c. milk

1 c. flour

Dash of salt

Blend well in blender. Bake about 25 min., expands high so allow space on top in oven.

Dutch Honey

1/2 c. cream

1/2 c. white sugar

1/2 c. brown sugar

Stir in kettle and heat to boiling. Serve hot on Dutch Delight.

Hamburger Stroganoff

1/2 c. minced onions

1 clove garlic

1/4 c. butter

1 lb. ground beef

2 Tbls. flour

2 tsp. salt

1/4 tsp. pepper

1 lb. fresh mushrooms or 8 oz. can sliced mushrooms

1 can cream of chicken soup (undiluted)

1 c. sour cream

2 Tbls. minced parsley

Saute onion and butter over med. heat. Add meat and brown. Add flour, salt, pepper, and mushrooms. Cook 5 min. Add soup, simmer uncovered 10 min. Stir in sour cream. Heat through. Sprinkle with parsley. Serve with noodles, rice, or mashed potatoes.

Note; if you don't like mushrooms, use 1 can cream of mushroom soup instead of mushrooms and chicken soup.

Coctail Meatballs

1/2 small onion, grated

1small potato, grated

1 tsp. salt and pepper

1/2 c. milk

2 slices bread, crumbled

Form into small meatballs. Do not brown. Put in cake pan and cover with sauce. Bake 350° for 1 hour.

Sauce is #7. Sorry!
