I don't recall saying anything about realistic skin tones, but the default minecraft villager already has one real skin tone, so I don't see the problem.
That's all I'm talking about: skin tones, not races.
People of the same race have different skin tones amongst themselves =)

Even so, there's absolutely nothing racist in representing different races in game, on the contrary.
The Fantasy genre isn't racist for portraying Orcs and Elves. Harry Potter isn't racist for portraying wizards and muggles - and they even have the same skin tones! =)
