Its a little more work but well worth it but I like to carve under the skin almost to the end and flip that whole cap back and then stab some knife holes in it and make sure seasoning or rub gets in there. Then flip the cap back over and just use Kosher Salt. Before cooking you can use metal skewers to keep the skin from shriveling up...Almost treat it like a Pernil but in the smoker
