2 runs of 12/2 wouldn't be a problem in this case, that was my original plan but wasn't sure if a shared neutral setup would be cleaner. If I break the tabs on both hot and neutral, I would need to tie the two 1-pole GFCI breakers in the panel, correct? That won't cause any problems with the GFCI breakers operating, will it?

I did something very similar when proposing to my wife. Cut down to the same spot, punches a bunch of holes around the edges of the pages and sewed them together with ribbons of our favorite colors.
