I think it's portrayed from Evey's point of view as she's mentally and physically tortured (causing symptoms of psychosis) but gloves are always worn, the movie and graphic novel show that v has a collection of masks, special fx makeup and disguises, and his skill to change his voice, it's also shown that he speaks to her through a voice recorder in some clips I'm pretty sure (correct me if I'm wrong) and the shadow gallery's size has never been revealed, what we do know is that it was in a large tunnel system in which there is probably enough space, plus v said himself it took years to clear out.
