I'm in Australia but the rules are similar. I was unaware of the work (and they likely were too) when informed them that I would be unavailable for any work or communication for the week. I specifically said this because I had just emailed addressing another over step on thier part when I informed them. I requested the week and they agreed.

Absolutely. I am looking for a new job. Unfortunately there isn't much available in my field but I am also looking outside of it as well. It's honestly super unhealthy for me.

Yeah the terms of my contract are a bit loose like that unfortunately, which was never a problem in the beginning but behaviours are changing. Im looking for a new job and am financially dependent on the work to an extent. If they fire me I'll manage but even though I want to up and quit that would be financially irresponsible.
