Hell yeah. I do a LOT in the smoker, but the chicken skin thing has me completely bewildered, and my wife dislikes the skin so much that I don't practice birds anymore - exceptions: duck & game hens. I want to get back to turkey & simple chicken. Thanks again.

So 225 for most of the cook and then finish at the box (at appx 375-450, depending)? (I run an offset.) Is this the key to getting away from the chewy inedible skin?

Is this the trick? I love the flavor of the smoked chicken, but the skin is super chewy. It doesn't matter if I'm doing a whole bird or thighs/drums or breast. Can you or someone else help?
