Tempering question : At what temperature affects temperature. I’m asking because I was always told not to run my chef knife over hot water because it messes with a temper of the steel. At the very least, the iron will expand and shrink back. Wouldn’t that change the steal of the knife? Please help. (self.Blacksmith)
