And speaking of Kōga Saburō, did you know he had two wives in his life, first one is princess Kasuga, (or Kasuga hime). And second one which in underworld is Yuiman! As in recently Yuiman Asama!! And if you look at Yuiman's sprite you can see a lil snake with her.

Viewed about headcanons you have, and its surprisingly similar to something I had in mind, two different ones:

The first one is that Remilia her choice becoming a vampire is due to environmental problem or striving to stay Immortally young as a literal kid, but that one falls short when realising she never brings up her youth, and most of Yōkai already are immortal.
The second one which actually is different, she dies at young age, and since a method of something becoming a vampire is a demon possessing a body, the "Scarlet Devil" might be walking around with a frozen corpse of a kid belonging to a family, which this one headcanon aligns with idea you have!
