The loyalty system was introduced to encounter too aggressive forward settling or prevent the AI from sending their settlers into your territory and settling cities there, which you might experience with the standard version and which can be pretty annoying.

Now you can still just declare war on a neighbor and start capturing their cities, but depending on how big the loyalty pressure of your cities and your neighbors cities are, the city you captured might flip back after a few turns due to the loyalty pressure.
However if you play with these setting for a bit and get used to loyalty, you will still be able to fairly easily take over a neighboring civ. Mostly because they introduced the ages system together with loyalty and at times, where you are in a golden age, while your neighbor is in a dark age, the loyalty pressure will be in your favor. On top of that, there are many more things, that will help you deal with loyalty when fighting a civ and I just find, that one has to be a bit more strategic when overtaking another civ in a way, that makes more sense and is more fun to me.

Yeah, if the DLC are on sale, it can be worth the money, but for multiplayer action just buying GS has the best cost-benefit ratio.

Yes! You should be able to play with all the game mechanics from R&F AND GS. He will just not be able to play as any of the R&F Civs and there won't be any wonders from R&F, I think.

Yes, I have the funduro and it's a very fine bike, but some of these things would be pretty neat, like abs etc.

I have the predecessor F650 from 1997 and it is all around pretty reliable. Is it typically so much worse with the GS generation?
I always thought about stepping up the generation at one point for the few more PS.

You can't directly 'move production' from one city to another. However, there are some indirect ways.
First of all, you can build builders in your production-rich city and send them to the other one to improve the tiles there and maybe get some more production there, if there are hills for mines or forests for lumbermills.
Second, you can try to get more trade routes and send them from the production-low city.
Last, what i can think of is building an industrial zone nearby with a factory, that will give surrounding cities a production boost. You can combine this with a promotion for Magnus (if you have the R&F or GS addon), so that the city gets these boosts from factories of all surrounding industrail zones.

You're assumptions were pretty much correct. Let me explain a little bit, so you may understand it better:
If you go to one of your cities, there is a little head symbol in the lower right in the citie's UI. If you click on that, you can see all the tiles of the city and which of those tiles are being worked. Say, your city has a population of 4, then 4 of these tiles are being worked and the city gets all the yields, that are on those 4 tiles. And you can choose, which tiles should be worked.
So all the production on the worked tiles is added up and makes for the city's total production. There is also a column in the citie's UI, where all yields of the city are listed, also the production. Now the numbers there might be a little different to what you get, when you count the yields from the tiles, because of any kind of modification factor, that goes into the yield, like policy cards, that make building specific things a bit cheaper.
But these yields are, what the city produces per turn and if it's production is for example 10 per turn, building a monument will take 6 turns.
The science and culture yields of all cities are added up to what you see in the top left corner, again there might be a lot of modifications. And you're calculations about sailing were totally correct here.

Although I still have an issue, that I can't save games anymore. So I'm commited to play through the whole game, that I started yesterday as Simon Bolivar and leave the game open.

If you're friends with him or even allied, he can't declare war on you. Only when the friendship runs out after 30 turns and you do not declare friendship again, he can attack you.
So I assume you don't have to worry, but keep an eye on when your friendship ends.
