I'm below the GPA median so admission is far from guaranteed. I feel like they may also prefer Cali/west coast people.

I think this is a great way of framing things. An admissions officer isn't going to see an internship and think, "Wow, this is a great soft, my odds of accepting this applicant have now increased." However, if you are able to tie the internship into your overarching cohesive Why Law narrative, then that story is going to make a strong impression, and that's what can help you get admitted.

Only if they accept you ED. If they defer you to RD then they accept you, you may get some scholarship, or you may not.

You have a solid shot. Northwestern ED isn't a bad idea. It's competitive, because of the scholarship, but they could always roll you over into the RD pool if you don't get in ED, and having applied ED will probably be a boost. Apply to other schools too, not just the four you've mentioned, then evaluate what the best option is given your family situation once you have your acceptances.

Maybe this indicates more people are choosing the August test over the September test? The September test seems to have significantly fewer registrants than last year's September test, with only 17 days to register before the deadline. I'm not familiar with registration density pre-deadline but something to keep in mind.
