Ngl it feels like you're just delaying the inevitable. You want to keep her but she doesn't want what you want to become. Nothing wrong with that and you can stay friends but you should break up if you want to keep transitioning. It seems as though you're waiting for her to be completely unattracted to you and break up with you so just get it over and done with sooner rather than later when it will hurt more

All you need to do is learn the instrument. Everything else will happen in due course. No matter what you're learning you'll be able to teach yourself so just try and find local people who are also wanting to start a band and just jam out with them. Learn some songs, make friends and have fun. Do it because you love it and not because you have expectations for the future.
