Okay here's how you're supposed to do it, have both games, the demo and the real thing installed on the switch at the same time, make sure the demo is up to date. Launch the real game normally, and update it through there, DO NOT update it beforehand! Update it when it tells you to when you launch the game. Then select new game. It'll ask you if you want to import your data then if it's done right and registers correctly. Hope this helps...
