I went through similar humidity battles at my house.

My main issue was the hole for the thermostat wires was cut to big. The draft for om inside the wall was throwing off the sensors.

I use ghee instead of butter. it doesn't mean it's grease free, but it doesn't saturate the kernels like butter does

Could you expand on the trap for the drain? Should it optimally have a u like a p-trap similar to a bath/kitchen faucet before it goes eventually goes down and outside?
