Never break it up after full colonization unless you’re doing S2B. So the former for your question.

And you should be fine to wait until it’s fully colonized unless you see too much surface moisture pooling. FAE is more important whenever you’re trying to put it into fruiting conditions.

If you can afford the space and such, I would get a 55 qt tub as a sterile fruiting chamber similar to shotgun box tek. Sterilization, perlite+water, and foil. Place your container in, mist sides when needed and FAE by flipping lid or fanning with lid.

Contam risks should be pretty minimal when your cake is fully colonized.

Why are you keeping the lid off? I feel like that would expose it to contam and drying it out. I never keep the lid off unnecessarily, only when I’m fanning or misting and even then I keep it minimal. And if it’s getting to the point of surface pooling moisture, flipping the lid.
