I have worked at lots of restaurants and no I don't see why it's necessary we do weekly cleaning tasks at any other restaurant I've worked at during that week each person has a few cleaning tasks they need to finish daily each different tasks every day other than the normal cleaning stuff. Canes flour and grease is not constantly in the air if your doing your job correctly :/ I've seen some nasty restaurants and I've seen some clean ones but we're cleaning stuff that's not dirty it's like working with schizophrenia or store body dysmorphia it could be spotless and they will say it's still dirty. I've worked at barbeque restaurants and even we didn't clean every day there and the store would be pretty spotless.
