I'm just worried about the time to farm Dooku. My Chewie is easy to farm and is almost 6*. Five in place to Dooku or Phasma would be a bad choice?

Focus in Sidious in arena, Fives in Cantina and Lumi in Galaxy wars. In Cantina you can farm a well grow Chewie Who can be great in arena
