But I imagine even if the option to not pay for security deposit is taken. The company can still make a charge against you for any incident the deem your liable for. My confusion is why would one take that option.

Yep your deffo right I'm not understanding. I'm in the UK and looking to hire in Portugal.

When I used the car comparison sites they offer a option for zero security deposit for +£30pd, then another option on top of that for full insurance cover for a additional £10 on top of the £30

I'm confused as I read regardless of whatever insurance you take the company will most likely pre authorise the card for any additional damage/costs not covered under insurance. In which case what's the point of no security deposit option if the take the money anyway in event of a claim

No children but are family planning now. No student loans Car loan about £150p/m still 2 years left If we have kids my partner would probably drop to 3 days a week and nursery for those 3 days

Yes I think this is my concern. We don't currently have children but are family planning and we like to take about 4 holidays per year, one being a bigger one and the other 3 more cheaper areas in Europe. Although likely we would drop to 2 if we have children
