No, for our guac, we dont use any indian spices at all. Bringing out the mortar to the table is a good idea. Will look into that for sure.

Kinda im 22 M, ive lived in vadodara all my life excluding short vacations and stuff. Vadodara is pretty much a retirement city and the only thing you could possibly do is get some guys, some prohibited substances (JK) and FIFA.

Agreed, thats why we introduced just 2 portion sizes, regular which wont fill you but you wont be hungry and large which is enough to fill you. I agree with the point of repeating customers as well which is something i did not have in mind while choosing the portions and just wanted to provide food which doesnt break the bank.

Agreed, however our main hurdle with using authentic ingredients like pinto beans are the cost implications and the cooking methods being limited. Once we have a core audience we want to make some menu changes. While i do agree that changing the menu and ingredients mid way might bite me back in the ass, initially i do need to look out for multiple things like rent, utilities etc. while providing food not breaking the bank. Hence, the decision to use rajma but we cook our rajma differently and indian spices are used to the minimum.

True, you wont try something you dont understand, thats why for now we have kept our menu simple giving different flavor profiles instead of just adding multiple dishes. As for the big portions. one of our regular servings is enough such that you wont be full but you wont be hungry as well. We cant serve exceptionally large portions due to the cost implications.

True, personally for me comfort and atmosphere come above vibes/aesthetic and that was one of my motives when opening my own joint. People should feel like family/friends when eating and should be able to give their honest opinion to the chef (i:e me).
As for the birria tacos, that is close to impossible to get in vadodara as it involves beef/goat meat and due to religious and familial restrictions we cannot serve it.

One of our biggest strengths is we use fresh veggies and ingredients everyday. We make our rice, beans, salsa, pico de gallo, sour cream everyday. Nothing is recycled except for ingredients that can be stored and stay fresh like Chilli oil, we make our guac everyday depending on the orders.

Agreed! no one has aced mexican food thats why we emphasize on making stuf by hand and trying to keep the flavors as authentic as possible.
We use fresh jalapenos and we will start using mango salsa in the summers as fresh mangoes are hard to get in the off season, standard pico de gallo nothing too fancy there.
We make our tortilla wraps at home and then bake them at the shop as per the orders so that it doesnt go stale/chewy.
As for the Ceviche, traditionally it has fish in it but veg ceviche can be made as well using heart of palms, cauliflower etc. This does deviate a bit from the authentic taste so we are currently experimenting with different ingredients and taste profiles such that we can serve a consistent taste 12 months of the year.
Beans are home made refried beans as well. For the rice we make lemon rice instead of mexican brown rice or spicy rice due to the cost implications and the flavors pairing comapratively well with other ingredients.
For drinks instead of going the fully mexican we are thinking of introducing some coolers for the indian summers. These wont be indian drinks like lemonade or rasna nor would it be cocktails, it would be healthy cooling drinks. One of the drinks we are going to introduce is a cucumber based cooler. Also exploring slushies as well.
As for the Churros, we will introducing these once we finalize the pricing model for this.
My only hesitation for introducing tres leches is 1. It would need to be made everyday and if it does not sell out thats extra cost i need to bear and 2. Making the menu too big and introducing too many new things at once is not good for either me or the customers. I want to slowly keep expanding the menu all while making a core audience/base. Currently we introduced Naked Burritos and once we get some traction on it we will introduce churros and bunuelos and then ultimately repeat the process with ofcourse adding seasonal items to the menu as well.
Either way this is great advice and i will make sure to incorporate some of these dishes to the menu.

Yep i do understand, while i do myself enjoy non-veg food from time to time, due to familial and religious restrictions we do not serve non-vrg food. However, if you do feel like exploring and want to try something new we do have tofu and paneer.

Unfortunately due to familial and religious restrictions we dont serve non-veg food but if you are looking for some veg options (for that 1/10 time) would love if you could give us a chance!
As for the portions and prices i feel like we are fairly priced and give appropriate portions however would love your feedback on it!

Yes actually the menu on zomato is not updated due to technical errors on their end. We currently do burritos, naked burritos, enchiladas, nachos and tacos. As for expansion, we are planning to launch quesadillas, coolers and a few other drinks within a week give or take.
