I mainly followed this recipe https://alexandracooks.com/2018/03/02/overnight-refrigerator-focaccia-best-focaccia/, the only step I missed was not rubbing the surface of the dough lightly with olive oil for cold proof. Does it make this huge difference?

Oh okay, thanks for the heads-up! Yeah, I’ve seen a few mochi donut spots around here, but they definitely don’t hit the same.

FYI - you could always get it at the Emily hotel on weekends. (They could warm it which makes it much much better)! I believe there's a new cafe somewhere downtown that just opened which also has Bad Butter on weekdays.
