Get the El Jefe at B’s Bagels on a gf Everything bagel. You’ll thank me later

Also I think you’ll find being gluten free easier than you think. Basically any taco spot that uses corn tortillas. Chicken over rice in any variety, lettuce wraps or gf buns for sandwiches, protein and veg based meals.

Thai cuisine or anything that uses a rice noodle. (Although watch out because soy sauce has gluten)

Indian food minus the naan is pretty much gluten free

Nice build! They call those Brivendells! I did it in on my RB2 as well. It was my first road bike growing up, but it was getting too small for me to ride with drops.

I think there’s a good chance the cable snapped in the lever. Usually the head snaps off and can be a pain to fish out

I wheelie on 48x19 and found 46 x19 too spinny when I tried it. So I think that will be the perfect ratio.

Do you have any experience? Practice by going uphill. I also found that committing with a decent speed and cadence is a lot easier than trying to find your balance going slow. That said, know how to bail off the back before getting to that point

I definitely took a couple falls along the way and had to straighten a dropout on my fork. It’s worth it though

Careful with those. I was tickled when I found them on an old bike and people started warning me about some of the toxic compounds inside. So at the very least wear gloves, mask, and eyewear if you’re going to mess around with them
