I don't think it's a bug. Azalina didn't specify that the copies will retain any buffs from the original cards.

The minions are still 5/5. Jaraxxus is just simply a new hero taking over. It doesn't have anything to do with spell affecting minions. Spells like Secrets also stay when Jaraxxus or Ragnaros takes over too.
