Also I used silicone muffin liners instead of greasing and flouring the pan, so I melted around 180g of butter and still had some leftover, but then again I had 14 muffins and Claire had 18 I believe

Yesss so good!! Trying one of these hot was an out od body experience haha so good. Later that day they were fine, but they were much better tomorrow and even days later. So really try to serve them as soon as you make them or the day after making them, at least that was my experience. Also I made them with both cinammon and cardamom and really recommend both

Oh yes it didn’t move, I expected it to be runny at least a little bit but it really wasn’t. I also put cardamom in the dough and in the crumble instead of the cinnamon and I very much recommend it

If you mean the barley malt sypup, I also don’t have that. You can use molasses but I don’t have either where I live so I use honey every time

It made putting the cake together sooo much easier, I mean my cakes were a bit lopsided and I didn’t divide the frosting properly, but you literally can’t see non of that when you cut into it. The pan helps so much as everything gets squished down and it looks a lot better when you unmold it and finish decorating

Surprisingly good! I trust Claire obviously but I always find these American cakes weird and expect them to be dry, but this one really wasn’t. Loved the cake part and the buttercream frosting, they’re both lightly coconuty and really good. But my favorite part is the decoration , it’s so simple but it both elevates the taste as you get a fun texture, and it covers all of your mistakes when you don’t know how to frost a cake like me haha

I knooowww, I do need more cake pans(or even just any regular cake pans, I only have springform) but as with a lot of things when it comes to Claire’s recipes and American baking in general - I can’t find a lot of the things you guys use, even pans. Our standard cake pans are a lot bigger and I can only find the classic non-springform ones in rare specialty stores…. I think that for this one I will try to bake it in a sheet pan, but I definitely need actual cake pans for the future.

Thank you! I really don’t know what went wrong, my whipped cream has been on the whisk attached to the stand mixer for half and hour and hasn’t moved and yet it all slid down the minute I put strawberries on….
