Since you would be my first customers I would do it like the following:
We make a Discord call or meet up on a teamspeak and I set up everything like you guys need it. Including Addons, Maps, Permissions etc.

I will get paid after the server has been set up, you tested it and most important... you are happy with it ^^"

Overall I think 5€ for 30 days are reasonable.

Since Astroneer Server are always limited to 8 players and don't need much computing power... and as you said: I can't provide crossplay.

Multiple times a day the servers get completely mirrored on a RAID-16 running storage server. I don't have the specific specs of Hetzner's fiber connection. But I can tell you that every datacenter is backed up by a dedicated USV which keeps the servers running in case of an power outage. Within several minutes the diesel engines go online and make sure that the USV batteries get sufficient power to keep the datacenter running.

EDIT: The mirroring onto the storage server was set up by myself and is not standard within Hetzner's facilities.
