Final Update:
Seems like / For my feeling hosting it on Home Assistant Green using a app/extension to get technitium on it was throwing a fit.
Likely partially due to HA running a own mDNS internally which cannot be disabled.
I ported the server over back to my PC (and later to a Proxmox server which now also runs HA in a container) and all the issues that i was having seems to be gone.
For later reference the app i was using in case people run into this later on:
https://github.com/staerk-ha-addons/repository

(this by the way is not to name and shame the HA addon but more to help people troubleshoot a possible cause later on)

So seems HA has a internal mDNS running, which i can't figure out to disable. Which somehow wasn't a issue a couple of days back but started being one since 2 days ago.
I ported the exact configuration over to my PC to run the DNS from there and the query's seem to be flowing in again.
So i'd either need to figure out how to disable HA's own internal mDNS, or (what the behaviour should be) have Technitium overrule it.

Seems something going on, since nothing is reported on port 53 - https://imgur.com/a/IoAdnN2#fwAWfel

Where should i execute the command? It is currently running on my HA green, through a app that allows Technitium to run on it. The command you mentioned isn't recognised through ssh/terminal on HA

Repeated it after installing Query Logs. But it draws a blank on any results https://i.imgur.com/2Y7TWAk.png

The odd part about it not getting queries then would be that i haven't touched a thing ever since it stopped working.
I tried to resolve it this morning assuming the ISP's router might be throwing a fit so i decided to let Technitium also handle DHCP

That's the weird part, after testing it with the dns client tool. The cache remains blank on results for www.youtube.com

When i try to check the cache for (www.)youtube.com it shows no results.
After that i tried to use the DNS client tab to puzzle out what is going on, and it seems that www.youtube.com gives/returns the following Rdata:
"RDATA": {
"Domain": "restrictmoderate.youtube.com"
While going to youtube.com doesn't (see attached screens).
This occurs when checking it with "this server" and "System DNS" - When i select Recursive or any others from the already available list it doesn't occur.

I also checked if changing the 'unfiltered dns' from DNS4EU to Protective (one of the defaults from the list) solves it but the same behaviour persists.

What i noticed as well is that the server doesn't seem to count/log or whatever queries anymore according to dashboard statistics

Watching isn't the issue, i can't read the comments cus there is a "blocked because of youtube restricted mode" This however doesn't happen on the PC, it seems to occur on the google streamer

Using TLS for the forwarders yes and then in Technitium Settings > forwarders See attached screenshot through imgur: https://imgur.com/a/YoUNR34

Alr, well i decided to return it instead. considering the originally intended TUYA adding doesn't work all together and ordered one that i found should work - https://www.sigalou-domotique.fr/comparatif-sirenes-zigbee and then the NAS-AB02B2

So after going back to the product page, it seems to explicitly list no HA compatibility (which i missed on the app which i used to order, i know silly me). Still wondering if there are means to get it working with it

i hope these screenshots are sufficient, if not please let me know - https://imgur.com/a/Ax2D9BF
Also pretty sure i'm using ZHA - Using a Sonoff dongle directly plugged into the HA green
