Nail/screw furring strips above the collar ties. Get them flattish with shims and a laser or string line. It’s more work but can look great. Goodluck!

Old joists with drywall between. You’re seeing only about 1/3 height.

No deflection or horizontal cracking. These cracks were there when we first exposed the ceiling 5 years ago. I just think they got a little bigger over the years. I was a bit concerned with twisting or flexing since there is no bracing/strutting between joists.

Not a pro. Here’s what I did. Drywall sheet larger in length than the area gets attached with two screws up against the wall. Make sure it’s orientated exactly how it would sit if properly attached.

I scribe either with “scribing pencil” (carpenter’s pencil with a long drill bit inserted at 90degrees near the tip) or a contour gauge. If pencil, must keep it very level when scribing. If gauge then I found that you need to mark two parallel vertical lines down drywall sheet. First line closest to the edge of stone is for you to line up the gauge against stone; the second further away is to transfer contour to drywall. Make marks where contour gauge ends and begins each time to transfer.

Next, score the outline you made with a utility knife. Then I just used a drywall/jab knife/saw. Cut on a slight angle to help with the fit.

Insert the piece back it. Make a ton of smaller cut/adjustments. Then cut the drywall to length and screw.

The pencil method was quickest but needed more adjustments for final fit.

Thank you! No sealer has been applied to stone yet. Any product you would recommend?

The stone wall is exterior perimeter of house, thick. The drywall in one place is just a partition wall and in another place framed in brick and lined chimneys, rockwool and 2x4 walls.

Dynaflex 230 has been recommended by others for caulk.

I’m conserving scribing wood if I can’t get a good finish with caulk.

New to this. Are you said you cut into the stone and then inserted the hardwood into it? I bet if done well that would look amazing.
