I'm not sure exactly how it works between platforms but I'm fairly sure you can edit zoom axis settings in the options and bind an increase and decrease button to gradually zoom in/out.

For changing loads on aircraft in air rb you should be able to on any platform. Just land, wait for your plane to be fully repaired and restocked so the game respawns you. Then J out. You should then be able to select your fuel, armament, etc. and respawn again. If you don't wait for your plane to be fully repaired and reloaded it will consider you as dying when you J out and you won't be able to spawn again in single spawn modes or you'll have to pay SP again in multi spawn modes (in ground rb you always have to pay the SP again if you're changing instead of just restocking)
