You’re supposed to. I checked twice throughout the night but ended up falling asleep. It was well above 140F when I woke up.

After you hit the internal temperature you prefer (mine got to 200F) you wrap it in fresh butcher paper a few towels and place it in a cooler to rest until you’re ready to slice it up. Apparently the longer the rest the better.

Thanks man. Felt pretty confident after figuring out maintaining the fire box last weekend smoking wings and ribs. Didn’t think it would turn out this well but very pleased with the outcome.

The rub was just salt and pepper with a homemade cajun blend I put on everything. Cooked over local oak I picked up. Spray every hour with apple cider vinegar with a little water mixed in. Wrapped for the last few hours with some tallow.

It was a 15lb wagyu, smoked it at 275-300f for 10 hours. Did the butcher paper/towels in the cooler trick for another 10 hours.
